π€ **Creamy Broccoli Cheese Soup with Shrimp π§π₯¦**
**Ingredients:**
- 1 1/4 lbs extra-large shrimp, peeled and deveined π€
- 2 cups broccoli, diced small π₯¦
- 4 tbsps butter π§
- 16 oz cheddar cheese, hand shredded π§
- 2 tbsps cream cheese
- 1/2 cup onion, diced
- 1 tbsp minced garlic
- 2 tbsp yellow mustard
- 3 cups chicken bone broth
- 1 cup heavy whipping cream π₯
- Season to your taste (McCormick Pink Himalayan Salt, Pepper, Garlic All-Purpose Seasoning, lemon pepper seasoning, garlic powder, Italian seasoning)
- 1 tsp Xanthan Gum (optional for thickness)
**Instructions:**
1. Dice up the broccoli into bite-size pieces. Set it aside. π₯¦
2. In a stockpot, add butter, diced onions, minced garlic, and McCormick pink Himalayan salt, pepper, garlic seasoning. Cook over medium heat until onions are translucent.
3. Add broccoli and continue to cook for 3-4 mins until it turns bright green and is soft.
4. Add the chicken bone broth, heavy cream, yellow mustard, and stir.
5. Bring to a boil. Once boiling, turn down heat to simmer, slowly adding the cream cheese and the cheddar cheese, mixing as you add.
6. Add garlic powder and a little more pink Himalayan salt, pepper, Italian & lemon pepper seasoning to taste.
7. Let cheese melt; if you want more thickness, you can add Xanthan gum. Remove from medium heat. Tip: Mix Xanthan gum with a little warm broth before adding to avoid clumps.
8. Stir until the soup thickens, add shrimp, and enjoy! ππ²
