Is kale🄬 actually a superfood?

Kale is often touted as a ā€œsuperfoodā€ filled with essential vitamins and minerals…

Things like calcium, vitamin K, vitamin A, vitamin C, manganese, the list goes on…

But what so many people miss is that these nutrients are bound in plant defense chemicals, in this case isothiocyanates (which also inhibit iodine absorption in your thyroid)… 🧐

In the ā€œbrassica familyā€ of plants, which include kale, broccoli, chard, cauliflower or mustard, there lies a special set of defense chemicals called isothiocyanates…

One isothiocyanate in particular called goitrin appears to be a potent inhibitor of iodine absorption at the level of the thyroid - no bueno!! (PMID: **26946249)**

These chemicals only exist in these plant leaves when they are chewed, a clear defense mechanism to dissuade predation…

These make the nutrients in kale less BIOAVAILABLE, aka not absorbed and utilized well by your body…

And even if they were bioavailable (which they most certainly are not), you can get so many more nutrients from meat and organs…

And guess what, these nutrients are extremely bioavailable….

Liver is the real superfood!!

I eat about 0.5oz of fresh liver per day. The best bioavailable source of so many nutrients that are practically impossible to get from plants…

Especially kale…
