Did I put it in the wrong cake pan? Yes. Is it still the most luxurious Lemon Poppyseed Cake I've ever tried? YES!!

🍋 Lemon Poppy Seed LOAF
(not to be confused with the CAKE pan I used🤣)

🧁 Ingredients:

180g cake flour

1 tsp baking powder

¼ tsp baking soda

¼ tsp salt

2 large eggs (room temp)

150g caster sugar

100g unsalted butter, melted and slightly cooled

60ml fresh lemon juice (≈2 lemons)

Zest of 2 lemons (for strong flavour)

40ml milk + 1 tbsp Greek yoghurt

1 tsp vanilla extract (optional but balances the tartness)

1½ tbsp poppy seeds

🍋 Lemon Glaze (optional but lovely):

80g icing sugar

1–2 tbsp lemon juice (adjust for drizzle consistency)
