I am a beginner on this sourdough journey but so far, this is my favourite thing to make with sourdough discard. It’s a Homestead and Chill recipe called “Sourdough Granola” … you can use discard or active starter for it. I mix it up in the morning, let it ferment all day and then bake it in the afternoon/evening.
It’s full of nuts, seeds, oats and of course, the starter so it’s a recipe for when you have reintroduced those things … but remember, reintroducing foods is the eventual goal of AIP!
I have found fermented foods to be a great tool in my healing journey. I’m having fun with the latest ferment … sourdough.
Ps. I served this granola with berries and Greek yoghurt (use coconut yoghurt if you haven’t reintroduced regular yoghurt yet). This was my breakfast dessert! Aka … something sweet after my savoury brekky! 😉
