Barzh's dish of the week | Sehnah سحناه

Man's resilience in overcoming the hardships of the life in the desert is certainly evident in the Emirati cuisine. Preservation of fish was one of many ways the Emiratis used to ensure abundance of food supplies in the old days. Sehnah is a wonderful example of that. This grounded dried fish powder can have a shelf-life of up to a year.

A small Arabian-Gulf fish called Jashe’e is used in making the Sehnah. It is dried under the sun, then grounded until it is powder-like and mixed with salt, black pepper and grounded dried lemons.

Sehnah is usually served sprinkled on a bed of white rice with 'dihn khneen' (ghee), and is eaten with greens such as 'ruwaid' (white radish leaves) and 'barbeer' (purslane).
