Mouth watering Sandesh π
Ingredients:
- 1 liter full-fat milk
- 2 tablespoons lemon juice or vinegar
- 4 tablespoons powdered sugar (adjust as per taste)
- 1/4 teaspoon cardamom powder (optional)
- A few saffron strands (optional)
- Chopped pistachios or almonds for garnishing
Instructions:
Make Chhena (Paneer):
Boil the milk in a large pan on medium heat.
Once it boils, reduce the heat and add lemon juice gradually, stirring gently until the milk curdles.
Strain the chhena using a muslin cloth. Rinse with cold water to remove any lemony taste. Squeeze out excess water.
Knead the Chhena:
Place the chhena on a clean plate. Knead it with the heel of your palm for 7-10 minutes until it becomes smooth and soft.
Cook the Mixture:
Transfer the kneaded chhena to a non-stick pan. Add powdered sugar and cardamom powder.
Cook on low heat, stirring continuously, until the mixture becomes slightly thick and leaves the sides of the pan. Do not overcook.
Shape the Sandesh:
Let the mixture cool slightly. Shape it into small discs, balls, or molds of your choice.
Garnish & Serve:
Garnish with saffron strands and chopped pistachios.
Chill for 30 minutes before serving.
