Debbie’s Homemade Puttanesca

3-4 Tbsp. Olive Oil
1 large organic onion finely chopped
6-8 oz sliced organic baby portabella mushrooms
6-8 cloves of garlic, finely minced
1 tsp oregano
¾ tsp basil
¾ tsp marjoram
1 tsp crushed red peppers or to taste
2 (28 oz cans organic crushed tomatoes)
½ cup red wine
½ cup diced kalamata olives
2-3 tbsp capers rinsed
Anchovy paste to taste (2-4 tbsp.)
Garnish with fresh grated asiago or Parmesan cheese

Heat Oil in large pot and sauté onion and mushrooms until tender. Add all the other ingredients and simmer for about 1½ hours.

Serve over a small portion of organic brown rice penne pasta cooked ala dente. (1 cup dry)

For a delicious side dish accompaniment:

Sautéed Asparagus

Add olive oil to a large sauce pan, and flash sauté the asparagus just to tender but not overcooked and then season with sea salt and pepper. It is delicious to add minced garlic and red peppers to the oil.
