The Midnight Kitchen was created in the dead of night, over a stack of fresh corn tortillas and the aromas of Mexico wafting through air. Two young lovers stood over a blazing griddle with sleep on their minds but tacos in their hearts. Now, the tacos are ready. We specialize in pop-up and catering events for anyone in need of delectable, mouthwateri

ng tacos! Our inspiration comes from the foods of Mexico. We start by making our own lard from naturally-raised pigs, which is then used to hand-craft our tortillas and cook our salacious - that's right, salacious - meats. For toppings, we try to adhere to traditions as well: onions, cilantro and salsa. Our house salsas, with their special blend of chilies flown in from Arizona, will surely leave you begging for more. 草木も眠る丑三つ時、The Midnight Kitchenは仕込みのピークです。使い込んだ鉄板の上でトルティーヤがつぎつぎに焼きあがってくると、私たちのキッチンにはメキシコの街角のような、とうもろこしの甘いがふんわりと広がります。

昔旅したメキシコにはストリートのあちこちに競いあうように、タコスのお店がありました。トウモロコシ粉で作った手作りの皮に、煮込んだ肉や野菜の具を挟んで、サルサソースとトッピングを乗せたら、ライムを絞ってぱくり。様々な味と香りが口の中で混ざりあい、ほどけて舌と鼻腔をすみずみまでくすぐる。そんなメキシコのタコスが忘れられなくて、でもなかなかあの味に出会えなくて幾年月、とうとう皮から手作りで作っちゃいました！

皮は、トウモロコシ粉“マサ”に、自然の中でのびのび育った豚の脂を精製した自家製のラードを混ぜ込み、ひとつひとつ手でプレスして焼いています。具のお肉はスパイスやオレンジの風味をまとい、ほろほろになるまで煮込まれたあと仕上げに表面を少し焦がして提供します。

自家製のサルサソースは、メキシコに隣接するアメリカのアリゾナ州の唐辛子と、スパイスやハーブをいくつか使った複雑な味わい。最後に添えられた玉ねぎのみじん切りとパクチー（メキシコではシラントロと呼ばれています）が食感と香りにいろどりを沿えます。
