Who's ready for the Super Bowl! This weeks feature is "Cheesy Bacon". Great for dipping with my homemade soft pretzels. Here's the recipe:
1 1/2 cups of warm water
1 package of active dry or instant yeast
1 teaspoon salt
1 Tablespoon sugar
1 Tablespoon unsalted butter, melted and slightly cooled
3 3/4 cups of all purpose flour
coarse salt for sprinkling
Whisk the yeast into warm water. Allow to sit for 1 minute. Whisk in salt, sugar, and melted butter. Slowly add 3 cups of flour, 1 cup at a time. Mix with wooden spoon (or dough hook attached to stand mixer) until dough is thick. Add 3/4 cup more of the flour until the dough is no longer sticky. Poke the dough with your finger- if it bounces back the dough is ready to knead.
Turn the dough onto floured surface. Knead dough for 3 minutes and shape into a ball. Cover lightly with a towel and allow to rest for 10 minutes.
While waiting for the dough to rest, prepare a with 9 cups of water and 1/2 cup of baking soda.bring this mixture to a boil. Preheat your oven to 400 degrees
Prepare a baking sheet with parchment paper or use a silicone baking sheet if you have one. If using parchment paper you will want to lightly spray with cooking spray.
After the dough has rested, cut into 3 sections with a sharp knife or pizza cutter. Cut the sections into strips and roll the dough into 20-22" ropes. take the ends and draw them together to form a circle. Twist the ends, then bring them towards yourself and press down to make a pretzel shape. Or to make pretzel nuggets, cut the ropes into 1 1/2 -2" pieces.
With the water boiling drop your pretzels, 1 or 2 at a time into the boiling bath for 20-30 seconds. (any longer can cause a metallic taste to your pretzels) Scoop out with slotted scoop or spoon. You can drop 5 or 6 nuggets at a time and scoop out with slotted spoon.
Place onto prepared baking sheet and bake in a 400 degree oven for 12-15 minutes.
