Crab & Shrimp Stuffed Salmon Ingredients: 2 salmon fillets, 1 cup jumbo lump crab meat, 1/2 lb shrimp peeled deveined and chopped, 4 oz cream cheese softened, 1/2 cup shredded mozzarella or parmesan cheese, 2 cloves garlic minced, 1 tbsp lemon juice, 1 tbsp fresh parsley chopped, 1 tsp paprika, salt and black pepper to taste, 2 tbsp olive oil, lemon slices for serving. Instructions: Preheat oven to 190°C. In a bowl mix crab meat, shrimp, cream cheese, shredded cheese, garlic, lemon juice, parsley, paprika, salt, and pepper. Cut a pocket lengthwise into each salmon fillet. Stuff generously with the crab and shrimp mixture. Heat olive oil in an oven-safe skillet over medium heat and sear salmon for 2–3 minutes per side until lightly golden. Transfer skillet to oven and bake for 12–15 minutes until salmon is cooked through and filling is bubbly. Serve hot with lemon slices.
