Hi Friends! It’s so easy to make fresh pumpkin purée in the Instant Pot! Skip the hard part of peeling and cleaning the pumpkin and just rinse and cut off the stem. Set on trivet add one cup water the the pot. Lock lid in place pressure cook 12 minutes NPR. When pin drops open pot and carefully remove pumpkin. When cooled scrape out seeds and remove peel. Blend the pulp in a blender. I use the puree to make pumpkin bread and pancakes PLUS oastmeal and risotto! Yum!
