🦞 Lobster & Scallop Chowder 🥣
Rich, buttery, and full of cozy coastal flavor — this creamy chowder feels like a hug from the ocean! 🌊💛

Ingredients

2 tbsp unsalted butter

1 tbsp olive oil

1 onion (diced)

2 celery stalks (diced)

2 carrots (diced)

3 garlic cloves (minced)

2 Yukon gold potatoes (cubed)

4 cups seafood stock

1 cup heavy cream

1 cup whole milk

½ cup dry white wine (optional)

7 oz lobster meat (chopped)

7 oz sea scallops (halved if large)

1 tsp Old Bay seasoning

½ tsp cayenne (optional)

Salt & black pepper to taste

2 tbsp fresh parsley (chopped)

Lemon wedges for serving 🍋

Instructions
1️⃣ In a large pot, melt butter + olive oil. Sauté onion, celery, and carrots until soft. Add garlic.
2️⃣ Stir in potatoes, Old Bay, and wine — let it simmer 2-3 min.
3️⃣ Add stock and cook 15 min until potatoes are tender.
4️⃣ Pour in cream and milk (gently heat, don’t boil).
5️⃣ Fold in lobster & scallops — simmer 5 min until scallops are opaque.
6️⃣ Season, sprinkle parsley, and serve hot with crusty bread & a squeeze of lemon. 🍞✨

Italian Garlic Bread Sloppy Joes

A delicious and flavorful twist on a classic.

Ingredients:
For the sloppy joes:

1 pound ground beef
1 onion, chopped
1 green bell pepper, chopped
1 can (15 oz) tomato sauce
1/4 cup ketchup
1 tablespoon Italian seasoning
1 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
For the garlic bread:

1 loaf French bread
1/4 cup butter, melted
1/4 cup grated Parmesan cheese
1/4 teaspoon garlic powder
Instructions:
Make sloppy joes: In a large skillet, brown the ground beef. Add the onion and green bell pepper, and sauté until softened. Stir in the tomato sauce, ketchup, Italian seasoning, garlic powder, salt, and pepper. Simmer for 10-15 minutes, or until thickened.
Prepare garlic bread: Slice the French bread into 1-inch thick slices. Spread with melted butter and sprinkle with Parmesan cheese and garlic powder. Toast in the oven or broiler until golden brown.
Assemble: Serve the sloppy joe mixture on the toasted garlic bread.
Serve: Serve immediately and enjoy!

Tips:

For a spicier sloppy joe, add a pinch of red pepper flakes to the mixture.
You can substitute the ground beef with ground turkey or chicken.

Beef and Vegetable Stir-Fry
Yield: 4 servings

Ingredients:
For the Stir-Fry:
1 pound (450 g) beef sirloin or flank steak, thinly sliced against the grain
2 tablespoons vegetable oil (or sesame oil)
1 cup broccoli florets
1 bell pepper (red or green), sliced
1 cup snap peas (or snow peas)
1 medium carrot, thinly sliced
3 cloves garlic, minced
1 teaspoon fresh ginger, minced (or 1/2 teaspoon ground ginger)
2 green onions, sliced (for garnish)
For the Sauce:
3 tablespoons soy sauce
2 tablespoons oyster sauce (or hoisin sauce)
1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
1 tablespoon rice vinegar or sesame oil
1 tablespoon brown sugar (optional, for sweetness)
Instructions:
1. Prepare the Beef:
Marinate (Optional): If you have time, marinate the sliced beef in 1 tablespoon of soy sauce and 1 tablespoon of cornstarch for 15-30 minutes to enhance tenderness and flavor.
2. Prepare the Sauce:
Mix Sauce Ingredients: In a small bowl, combine soy sauce, oyster sauce, rice vinegar, brown sugar, and cornstarch mixed with water. Set aside.
3. Stir-Fry the Beef:
Heat Oil: In a large skillet or wok, heat 1 tablespoon of vegetable oil over high heat.
Cook Beef: Add the sliced beef in a single layer. Stir-fry for about 2-3 minutes until browned and just cooked through. Remove from the skillet and set aside.
4. Stir-Fry the Vegetables:
Add More Oil: In the same skillet, add another tablespoon of oil. Add the minced garlic and ginger, stirring for about 30 seconds until fragrant.
Add Vegetables: Add broccoli, bell pepper, snap peas, and carrots. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
5. Combine:
Return Beef: Return the cooked beef to the skillet with the vegetables.
Add Sauce: Pour the prepared sauce over the beef and vegetables. Stir well to combine and cook for another 1-2 minutes until the sauce thickens and coats the ingredients.
