this heat has me craving cold & refreshing salads, & this spicy, sweet, crunchy, creamy Thai peanut salad has been hitting👏🏼the👏🏼spot👏🏼!
It’s high in fiber from fresh veggies and low carb thanks to folate-packed heart of palm “pasta”, made out of artichokes (zucchini noodles would also work here!).
The sweet & spicy peanut dressing gives this salad a boost of heart-healthy fats and provides so much flavor that will make you want seconds😋
Adding chicken, shrimp, tofu, or edamame (optional) is a great way to make this salad more filling💪🏼
