It is said that if laughter had a color, it would be pink. Has there ever been a better time to pop the cork on some pink bubbly? Add some saucy vibrant orange notes and more than a nod to bitter flavors, and you have the perfect pink-orange drink to throw in the face of 2020 before you kick it out the door. (You'll want to drink it, so please don't actually throw it.)

RECIPE

For 2 servings:

2 oz. Malfy con Arancia Gin (Sicilian blood orange infused). Any citrusy gin or vodka could work here
1/2 oz. Peychaud's Aperitivo (pricier but suitable alternatives would be Aperol or Campari)
1/2 oz. liqueur such as St. Germain
1 oz. fresh squeezed blood orange juice
2-3 dashes orange bitters
Pink champagne or other sparkling rosé
Fresh thyme sprigs for garnish
DIRECTIONS

Add gin, , , juice, and bitters to a mixing glass or mason jar then fill three-quarters full with ice.
Stir with a bar spoon or chopstick until the mixture is just combined and cold, about 15 seconds.
Strain into chilled martini or coupe glasses. Each glass should be no more than half full.
Rub blood orange peel around the outer edge of each glass.
Add champagne and gently lift the gin mixture with a spoon to combine.
Clap the thyme sprigs in your hands once or twice to release aroma and place in the center of thinly sliced blood orange.

Note: Even if we can't party like it's 1999, this cocktail is perfect for batching ahead of time. Make the gin mixture a few hours in advance and refrigerate in a mason jar or glass pitcher until you're ready to mix the drinks. Follow directions above and enjoy.
