Gluten Free Honey Cornbread Muffins w/ Jalapeño Sausage, Sweet Onions,
Thick Cheddar + Flakey Sea Salt
Look no further for a fun addition to your Super Bowl Sunday spread! These are loaded with so many comforting, yet still healthy and
nutritious ingredients. Plus, they last up to 4 days in the fridge!
Ingredients
For the cornbread:
⁃ 1 cup almond flour
⁃ 1 cup gluten free cornmeal
⁃ 2 tsp baking powder
⁃ Pinch of sea salt
⁃ 1/2 cup unsweetened apple sauce
⁃ 3/4 cup of almond milk
⁃ 1/4 cup honey
⁃ 3 eggs
For the savory skillet mixture:
⁃ 1 tbsp Garlic Expressions dressing + marinade
⁃ 1 large sweet onion, sliced and diced
⁃ Half pound to 1lb of turkey sausage
⁃ 1/2 jalapeño, diced
⁃ 1 cup of thickly shredded or shaved cheddar
Instructions
⁃ preheat oven to 350 degrees
⁃ Line muffin tray with parchment paper liners and set aside.
⁃ In a large bowl, whisk together the dry ingredients.
⁃ Then add tbt we ingredients into the fry by folding together.
⁃ In a small saucepan, add the Garlic Expressions and diced
onions.
⁃ Then add in the turkey sausage until it’s browned.
⁃ Add the skillet mixture into the cornbread batter by folding
together.
⁃ Sprinkle in the diced jalapeño and thick cheddar shreds.
⁃ Divide the batter between the muffin tins and bake for about
18 minutes or until golden brown.
⁃ Check temperature of muffins and once it reaches at least
165°, remove from oven.
⁃ Too with flakey sea salt and enjoy!!
⁃ This would also be a great recipe to swap out the turkey
sausage for your favorite plant based sausage crumbles!

This Honey Peppered Roasted Summer Salad is an ideal dish to bring to any pot-luck, backyard BBQ, or a quick dinner when you don’t feel like fully cooking a meal! I also love a salad that tastes even better the next day, and this one checks the box on that. Pro tip: make a double batch of the homemade honey peppered dressing because you’re going to become addicted
Ingredients
Salad:
⁃ 1 bay of fresh greens (we used a mix of arugula and fresh
spring mix)
⁃ 2 bunches of broccoli, trimmed
⁃ 1 delicata squash (cut, scooped out and sliced into 1/2”
rings)
⁃ 1 handful of chive blossoms (they are the purple flowers that
bloom on top of your fresh chives and add a delicious bite to the meal!)
⁃ 1 bunch of radishes, quartered
⁃ 1-2 tbsp Garlic Expressions dressing + marinade
⁃ Salt and pepper to taste
⁃ Avocado oil to coat lightly
⁃ 3 tsp smoked paprika
⁃ 2 tsp garlic powder
⁃ 1 smoked honey salmon jerky (not pictured but added later on)
Honey Peppered Vinaigrette:
⁃ 1/2 cup Garlic Expression dressing + marinade
⁃ 3 tbsp apple cider vinegar
⁃ 3 tbsp warmed honey
⁃ 1 tsp salt
⁃ 1 tbsp freshly ground black pepper
⁃ 1/2 shallot, finely minced
⁃ 3 garlic cloves, minced
⁃ 3 large tbsp of basil, chopped
Instructions
⁃ Preheat your oven or airfryer to 400 degrees.
⁃ Line a baking sheet with parchment paper or lightly spray
with avocado the basket of your air fryer.
⁃ Toss in delicata squash and radishes and a drizzle of Garlic
Expressions.
⁃ Sprinkle about 1 tsp of each of the garlic powder and smoked
paprika over the vegetables along with salt and pepper to taste.
⁃ Set timer for about 12 minutes.
⁃ In a large bowl, add your fresh greens.
⁃ Once the squash and radishes are crispy and cooked, add over
the top of the fresh bed of greens.
⁃ Next, add the trimmed broccolini to your oven/airfryer for
about 8 minutes. Lightly spraying with avocado oil and remaining
seasonings.
⁃ In a large mason jar, add all of the honey peppered vinaigrette ingredients and shake vigorously until everything has blended together.
⁃ Top your salad with the vibrant chive blossoms.
