I am such a sucker for a good tuna salad, and this pale yellow, creamy deli-style egg salad is so simple to make and one of my favorite lunches, especially on really hot days when I don’t want to cook (I usually have hard boiled eggs in the fridge already). It’s made with smashed eggs and two types of mustard for flavor and a bit of crunch, just so good!
