There are as many ways to prepare Aloo Gobi as there are people in the world. Many variations call for deep frying or pan frying the potatoes and cauliflower before adding them to the warm and flavorful masala, some ‘modern’ versions call for the potatoes and flower to be roasted in the oven before being added. Some variations do not include tomatoes, some do not utilize onion, some do not use garlic, some add other vegetables, and the spices and amounts used vary widely depending on who is preparing it.
