Vegan sushi for an easy weeknight dinner!

Using red bell pepper, cucumber, avocado, jalapeño, carrots, and tofu (or whatever else you love to have in sushi!), it’s easy to create lots of different rolls. Then add some soy sauce, sriracha, and spicy miso mayo… boom you’ve got bomb vegan sushi 👌🏼
