Blueberry and Banana Breakfast Loaf

Ingredients
- 2 large extra ripe banana
- 2 eggs
- 60ml coconut oil (can also use olive)
- 60ml maple syrup
- 2 tbsp baking powder
- 1 tsp cinnamon
- 200g plain flour
- 200g blueberries
For crust
Mix together
- 1 tsp brown sugar
- 1 tsp cinnamon
Mash the banana into smooth paste, add the eggs, oil, maple and a pinch of salt and mix well. Add the cinnamon, flour and baking powder and mix, then fold in the blueberries.
Transfer into a loaf tin and sprinkle over the cinnamon sugar. Bake 160 degrees C for 40-45 minutes until golden and cooked through.
Leave to cool for at least 15 minutes before slicing.
Store in fridge for up to 5 days. Also this freezes super well.
Best served warm, either pop in toaster or in oven, then top With a dollop of Greek yogurt and maple syrup.

Mediterranean Roasted Salmon Salad

Ingredients
- 1 salmon fillet
- 200g new potatoes
- 1/2 tsp smoked paprika
- 1/2 tsp dried oregano
- 1/3 cucumber
- 8 cherry tomatoes
- small bunch dill
- tsp chopped chives
- 1 tbsp capers
- 1 tbsp Kalamata olives
- 1/2 red onions
- I tsp Dijon mustard
- 1 tsp wholegrain mustard
- 1/2 tbsp olive oil
- 1/2 lemon juice and zest
- 1 tsp honey
Cut the potatoes in half, or cut into quarters if they are large. You want them to be all of equal sizes. Add to a lined baking tray with a drizzle of olive oil, salt and pepper and roast 210° for 25 minutes. Once cooked, allow to cool.
Sprinkle the salmon fill it with the paprika, oregano, salt, pepper, and a squeezed lemon and roasted 210° for eight minutes. Once cooked, allow to cool.
Slice the cucumber in half lengthwise and use a teaspoon to remove the seeds. Sliced the cucumber into half around 0.5cm thick, finely slice the onion into half moons and slice the tomatoes in half.
Add everything for the salad dressing into a bowl or jar and whisk or shake to mix well.
Add the cut vegetables into a bowl along with the capers, olives, potatoes, salmon, diced dill and chives and the salad dressing. Toss and serve with extra dill for garnish.
