This cheesecake and I almost ended our relationship. 😂

Attempt #1: Nope.
Attempt #2: Still nope.
Attempt #3: I seriously considered introducing it to the trash can.

There may have been some muttering. There may have been some dramatic staring into the oven. There may have been a moment where I questioned every life decision that led me to making a Burnt Basque Cheesecake. 🤦‍♀️

But I wasn’t giving up.

And finally… SUCCESS!

A rich, creamy Gluten-Free, Sugar-Free Burnt Basque Cheesecake topped with sugar-free caramel and fresh whip that was absolutely worth every failed attempt.

The lesson? Sometimes the best recipes come with a few disasters first. 😅
