If you have, you know it’s appreciated by professionals and consumers alike thanks to its incredibly silky texture, quality ingredients, and rich flavor. This is where raw material meets craftsmanship.

Butter is a living material. Chez Bordier, the life begins with the calf. Only sourcing milk from grass fed cows local to Brittany-Normandy, Olga Dairy produces the base: churned butter. The next day, this soft butter is kneaded on a wooden wheel, gradually being flattened, salted, and dehydrated. These tasks are carried out only by those who have served 3 years or more in apprenticeship to master the eyes and hands of this savoire-faire. After kneading and salting, the butter is shaped on the wooden tables of the workshop, preserving the texture and creating shapes fitting of each client.

Spots are first come first serve with purchase from either establishment.

Moulin open from 8-3. Bouillon open from 11-9. Enjoy either menu, in front of the game.
