I needed a little Mexican food today so I made Yuba al Pastor in blue corn gorditas. If you’re not familiar with yuba aka soybean skin or tofu skin it is a byproduct of boiling soy milk where the proteins come to the surface. The skin is removed and hung to dry in sheets or sticks which closely resembles pulled meat when cooked. The yuba also has 55% more protein and less than 1/2 the fat than pork that traditional Al Pastor is made from. Each of these gordita’s has 14g of protein... now this is good whole food plant-based eating!
