Snickerdoodles! I get attacked when I walk into work with these. No exaggeration. People are surprised when I tell them that I simply use the Betty Crocker recipe with no substitutions. I make one tiny change: I double the sugar when making the cinnamon-sugar mix for the rolling the dough balls. Otherwise, I think the cinnamon can be too bitter.

Personally, I use unsalted butter in all of my baking and cooking. Fight me. 🤷‍♀️ I add kosher salt where it needs to be. When it comes to these cookies, I replace half of the unsalted butter with Crisco. They come out a lil bit crispy and a lil bit chewy. 🤌🤌🤌 If you've got the time and fridge space, try laying out your cookies on trays, covering them, and popping them in your fridge for a couple of hours or overnight to let the flavors develop before baking. It's a game changer!

I had hoped, again, to be able to offer even a limited menu for Christmas and New Year's, but my husband's second hospital stay was much longer than we had expected, and he had some serious health complications following his second surgery.
We've been incredibly lucky to have our amazing friends, family, and co-workers for support during this time. I can't thank any of them enough. What could have been an absolute disaster in our lives has been, instead, a quiet, peaceful time for us to focus solely on his recovery. He won't be able to put any weight on his leg for another 3 months, so our life will continue to look a little different than we're used to.

Hello!

Just dropping in to give an update on my husband, Josh aka Mr. Cake Fite. Josh was the victim of a hit and run accident last Friday morning that left him with a completely shattered ankle. He's had one surgery and will need a second. He needs round-the-clock care, so I've taken FMLA from my job in order to be by his side. I had initially hoped to pre-make desserts to sell for the holidays, but he and I are still trying to figure out a sleep schedule, so I'm a bit of a zombie. 🧟‍♀️
We want to wish you all a wonderful, tasty Thanksgiving and holiday season, and we hope you sit down for a meal with your favorite people in this life. 🦃🥧

Hi, friends. I've been meaning to post a Thanksgiving menu, but we've had some family emergencies this week. My husband was in a bad wreck today that shattered his ankle, and we're currently in Indy, waiting for his first surgery tomorrow. His recovery is going to be a long road and I'll be right there with him throughout it.
I don't know that I'll be able to bake for this holiday season, which breaks my heart, but family comes first.
