Is it age, or is it the number of days you’ve been dehydrated and consuming unhealthy things multiplied by the nights with bad sleep and recovery, multiplied by stress?

People often blame their age for their problems but didn’t notice they lost their frequency of healthy habits in those years as well.

Is it that “I get hangovers now that I’m older,” or is it that you’ve drank so many times in the last 15 years that your liver is a little back-logged on detoxifying you while living in a polluted city?

Is just that “I don’t have the metabolism I used to,” or is it that - while age is a factor - your daily activity level decreased by 10% and stress increased by 10% year over year for the last decade?

These are the things that are so simple, but so important. Without them, we regress, age faster, and feel more exhausted.

The basics of our bodies can drag us down or carry us through.

Why is this healthy? Aren’t eggs bad? What about Birria sauce? What about potatoes?

While some people may have to temporarily follow intense diets that cut out things like nightshade vegetables (potatoes, squashes, tomatoes), due to inflammation, eating a potato alone isn’t going to harm you.

This is a healthy dish.

Pre-roasted then reheated potatoes provide prebiotics, fiber, and medium-glycemic carbohydrate, potassium, and more. They are also a whole food, not processed like pre-packaged mashed potatoes for example.

Eggs (high quality ones) have selenium, carotenoids, potassium, calcium, and monounsaturated (healthy) fats, along with less saturated fats.

Pickled asparagus offers probiotics and a nice kick to the meal.

Dairy-free feta cheese made from coconut oil adds pleasure to eat and balance to the flavors.

Served on a bed of baby kale dressed in a tiny bit of olive oil (1/4tsp), Sindhav sea salt, and pepper.

This meal is balanced with proteins, fats, greens, and was completely delicious as I covered it in left-over Birria sauce.

Besides the cheese nothing in this meal was processed.

That’s one of the biggest bases of health.
