The Meat Science Research Lab is located within the Dept of Animal Science at the University of Nebraska- Lincoln and currently focuses on early postmortem muscle metabolism, processing strategies and antemortem behaviors affecting quality.

Congratulations to all of our lab research assistants on their graduation this weekend! Undergrad and grad research assistants are the lifeblood of any working lab, and this week we saw 6 cross the stage and become UNL Alumni. This group is off to careers in the meat industry, building family businesses, applying to medical programs and veterinary school. We are so proud of yall and thankful for all the work you put in to make our lab what it is today! GBR 🥩🥓

Congratulations to our own Dr. Ty Schmidt for receiving the Sustained Excellence in Teaching & Learning Faculty Award!!
Dr. Schmidt teaches Fresh Meats, the Krutsinger Beef Industry Scholars Issues class, Physiology and Anatomy Lab. These courses play a vital role in our meat science curriculum and we are thankful for Dr. Schmidt’s hard work!
Congratulations to Sarah Vos and Ty Schmidt on being presented awards at the 2026 College of Agricultural Sciences and Natural Resources Awards Luncheon. Vos received the Graduate Teaching & Learning Assistant Award, and Schmidt received the Sustained Excellence in Teaching & Learning Faculty Award!
Thank you to Julie Musselman Reiling and FS&T for working with us on our beef sensory projects! It is always a pleasure to use the sensory facilites and interact with our counterparts in food science!
Our meat science groups conducts sensory panels at both Food Innovation Campus and the East Campus animal science complex in order to broaden and diversify our consumer feedback!

Congratulations to Grace Johnson on the successful defense of her masters thesis today!
Grace served as an UG and graduate research assistant, meat lab worker, and was a part of the UNL Quiz Bowl Team during her tenure with the meat science group and will be dearly missed!❤️🥩

Congratulations to graduate student Brooke Parrish (PhD student, Dr Ty Schmidt) for winning the $20,000 grand prize at the 3rd Annual Governor’s New Venture Competition!!
Brooke and former Schmidt graduate student Aaron Holliday are cofounders of startup FuturHerd Solutions, LLC, a company aiming to use autonomous robotics to reduce piglet mortality.
