POTATO CAULIFLOWER MASH {GLUTEN-FREE, DAIRY-FREE, & FAT-FREE}

Mashed potatoes are a beloved comfort food for many people. Thankfully, you can enjoy them— without the butter or milk—and still help yourself heal! In this recipe, the potatoes are joined by cauliflower to make a creamy and nutrient-rich mash.

Potatoes are also high in potassium and rich in vitamin B6, as well as a fantastic source of amino acids, especially lysine in its bioactive form. Lysine is a powerful weapon against cancers, liver disease, inflammation, and the viruses such as Epstein-Barr and shingles that are behind rheumatoid arthritis, joint pain, autoimmune disease, and more. Potatoes will be your allies if you’re looking to fight any chronic illness—to fend off liver disease, strengthen your kidneys, soothe your nerves and digestive tract, and reverse Crohn’s, colitis, IBS, or peptic ulcers.

Potato Cauliflower Mash

4-5 medium-sized potatoes, peeled and roughly chopped
1 small head of cauliflower, cut into large florets
2 tsp garlic powder
2 tsp onion powder
1 tbsp chopped chives, parsley or green onions, to serve
1/2 tsp paprika, to serve

Add 3 inches of water to a medium-sized pot, bring it to a boil, and add a steaming basket. Place the potatoes and cauliflower florets in the basket, cover, and steam for 15 to 20 minutes, until both are very tender.

Remove and place in a large bowl or pot. Add the onion powder and garlic powder. Mash until smooth using an immersion blender or potato masher. Serve topped with chives or paprika. 

Serves 4
