Herb Crusted Rack of Lamb with a Red Wine Sauce Ingredients - a rack of lamb - 1/2 cup Parsley - 1/4 cup Mint - 2 sprigs Rosemary - 2 tbsp Thyme - 4 cloves Garlic - 4 tbsp Parmesan - 1 cup Panko - Dijon mustard - Salt & pepper - Unsalted butter The Sauce - 1 Shallots - 3 cloves Garlic - 1/2 cup Red wine - 1/2 cup Beef stock - 1/2 stick Butter - Salt & pepper Instructions Season your rack of lamb. Sear all sides then start basting your rack with butter, garlic, thyme and rosemary for a few minutes. Combine the Ingredients above in a blender to make your crust. Do not over blend or it will become a paste. Brush your rack of lamb with dijon mustard then coast it with the mixtures. Bake at 375 until internal temp of 135.
