✨ Sweet, crunchy, and a little bit nutty! These chocolate-covered apricot kernel clusters are the perfect treat for a quick energy boost — packed with flavor and made with love. 💛 Just enough kernels for that delicious almond-like taste without overdoing it. 🍫🌰

This recipe makes 8-10 clusters
Ingredients
½ cup dark chocolate chips (or chopped dark chocolate)
2–3 tbsp chopped apricot kernels (keep total per serving safe)
¼ cup dried apricots, chopped
1 tsp coconut oil (optional, for smoother chocolate)
Instructions
Chop the apricot kernels and dried apricots into small pieces.
Melt the chocolate and coconut oil together in a heat-safe bowl over simmering water (or in the microwave in 15–20 second bursts, stirring often).
Stir the apricot kernels and dried apricots into the melted chocolate.
Spoon small clusters onto a parchment-lined plate or baking sheet.
Chill in the fridge for about 20 minutes until firm.
Tip: For extra crunch, you can add a tablespoon of sunflower seeds or puffed rice to the mix.

Ingredients
* 1 cup dried apricots
* ½ cup raw apricot kernels (Hunza Gold)
* ½ cup almonds or cashews
* 2 tbsp honey (or maple syrup)
* 1 tbsp chia seeds (optional)
* ½ tsp cinnamon
* Pinch of sea salt
Instructions
1. Soak & Soften
* Soak dried apricots in warm water for 10 minutes, then drain.
2. Blend
* In a food processor, blend apricots, apricot kernels, and almonds until crumbly.
3. Add Flavor
* Add honey, chia seeds, cinnamon, and salt. Blend until the mixture is sticky.
4. Roll into Bites
* Scoop mixture and roll into small balls (about 1 inch).
5. Chill & Serve
* Refrigerate for 30 minutes. Store in an airtight container for up to a week.
