Bake More May: Muffin Time
Today I wanted something quick but didn't want to commit to one flavor. I had a cupcake that was very popular recently but you just can't beat the classics.
Lemon blueberry muffin, topped with Lavender Vanilla Finishing sugar, and Cherry Almond Vanilla, topped with almonds that toasted as they baked and glazed with cherry syrup.
I don't have a lot of memories of muffins growing up, but I remember always wondering how grocery stores always got them to be so big and soft. Sometimes, more is just more. I scooped these until they were right to the rim of the paper and cranked the heat so their crowns would rise high over the tin.
I think they look beautiful. I just hate that I need them to cool down and settle before I can really appreciate them. But good things come to those who wait or something like that.
It's a reminder to take it easy sometimes. Not everything has to be right now, even if you really want it to be. Everything comes into its due time.
Waxing poetic was not on my to-do list today but here we are. I'm starting to understand why all the recipe bloggers do it.
