Simple but Rock, Special Beef Mechado (Braised Beef)

Max's style whole fried chicken, anong sawsawan mo?
Ingredients & Procedure:
Step 1 (Marinate)
Marinate whole chicken with fish sauce & calamansi or lemon for at least 12- 24 hrs. Stuff with cracked black pepper, green onions, lemongrass and dried bay leaves.
Step 2 (Steam)
On a steamer, add aromatics like garlic, red and greenonions, lemongrass, bay leaves, rock salt, cilantro. Steam whole chicken approximately 30 mins to 1 hr for the regular chicken, 2- 2.5 hrs for the native chicken. Let it rest, baste with Knorr seasoning liquid or fish sauce and make sure skin is dry before frying.
Step 3 (Fry)
On a deep fryer or deep wok, use peanut oil and fry chicken to perfection.
My sauce:
Banana ketchup, calamansi, soy sauce, tabasco and ground black pepper.
