You’ll need: 150g quinoa 250g dark chocolate 30g pumpkin seeds 30g goji berries Simply put the quinoa into a hot dry pan over high heat and stir regularly until the majority of the grains have turned a darker colour brown. You will hear the grains pop, a bit like popcorn. Meanwhile, melt the dark chocolate, either in a bain marie or microwave and stir in the majority of the popped quinoa. Lay this out on a sheet of greaseproof paper. Top with your choice of seeds, nuts, or dried fruit. I’ve used pumpkin seeds in goji berries plus a little extra popped quinoa. Leave to cool in your freezer and then break into shards and store in an airtight container. This makes a great snack and a much higher protein, more interesting texturally and tastier version of dark chocolate.
