πͺFitness meal vibe- Clean and protien packed!
Marinate 2 juicy chicken leg & thigh quarters in Laziza/or shan Chicken Tikka Masala, add π§ ginger-garlic paste, a squeeze of lemon π & spray a lil over itβ let it soak up all that flavor overnight π
Next day, toss in π sweet potato & π₯¦ broccoli over the sheet pan- season with salt + pepper, spray a lilβ oil. Layer over the tikka pieces on grill and bake at 385Β°F for 45 mins, then broil 3 mins for that golden crisp π₯
Take 2 slices of your choice of bread, i just loveeeeee the Sourdough bread so opted for it. Drizzle a lil bit of avocado or olive oil and toast in until crispy.
One tray. Zero mess. All flavor. π

β¨ **Besan Chila (Chickpea Flour Pancake)** β¨
A protein-packed, savory pancake youβll want to make every morning π
**Ingredients:**
* 1 cup besan (chickpea flour)
* Β½ cup whole wheat flour
* 1 tsp bhuna kuta cumin seeds (roasted & crushed cumin)
* 1 tsp chili flakes
* Salt to taste
* 3β4 green chilies, finely chopped
* Β½ onion, chopped (omelette style)
* Β½ bunch cilantro (or any veggies you like)
* Water as needed to make a smooth batter
* Oil spray for cooking
**Method:**
1. In a bowl, combine besan, wheat flour, cumin seeds, chili flakes, salt, onion, chilies, and cilantro.
2. Gradually add water to form a smooth, pourable batter.
3. Heat a nonstick pan and lightly spray oil.
4. Pour a ladleful of batter and spread it like a pancake.
5. Cook on medium heat, flip, and cook both sides until golden brown.
**Garlic Chutney:**
* Take 2 whole bulbs of garlic, peel & grate them.
* Heat a little oil in a pan, add the grated garlic.
* Sprinkle a pinch of chili flakes, Β½ pinch red chili powder, and salt.
* SautΓ© until the raw garlic smell disappears and it turns fragrant.
Serve your crispy besan chila hot with garlic chutney & a side of Greek yogurt or plain dahi π€
ππ Baked Salmon & Veggie Tray β Easy, Healthy & Delicious! π₯¦π₯π₯
β¨ Ingredients:
π 500g salmon fillet
π 1 lemon (for juice)
π§ Salt β to taste
β« Black pepper β to taste
πΆοΈ 1 pinch cayenne pepper
π«οΈ 1 generous pinch smoked paprika
π₯ 1 tbsp avocado oil or olive oil
π₯¦ 1 cup broccoli florets
π₯ 1β2 medium potatoes, cut into wedges
πΆοΈ 1 tsp Shan Chicken Tikka Masala (or your fave spice mix)
π©βπ³ Method:
Prep the salmon π:
Rinse the salmon and pat dry. Squeeze π lemon juice on top, sprinkle a little π§ salt, and let it sit for a few minutes to drain excess water. Pat dry again.
Season it up β¨:
Rub the salmon with πΆοΈ cayenne, π«οΈ smoked paprika, π§ salt, β« black pepper, and drizzle some π₯ avocado or olive oil on top.
Veggie time π₯¦π₯:
Toss broccoli florets with a pinch of salt and pepper. Coat the potato wedges with a little oil + πΆοΈ Shan Chicken Tikka Masala (or your choice of spicy masala)
Bake it π₯:
Arrange everything on a lined baking tray and bake at 375Β°F (190Β°C) for 35 minutes β until the salmon flakes easily and veggies turn golden.
Serve & enjoy π½οΈ:
Plate it up beautifully! Add your favorite sauce if youβd like β or just enjoy the perfectly roasted salmon and colorful veggies on their own. π
