Cheesy Chicken Burger with Fresh Greens

1 lb ground chicken
4 brioche buns
2 cups fresh spinach, divided
1 cup white cheddar, shredded
1/4 cup heavy cream
1 red onion, sliced
2 cloves garlic, minced
1 tbsp olive oil
1 tsp Italian seasoning
1/2 tsp paprika
Salt and pepper to taste
2 tbsp butter for buns

Mix ground chicken with garlic, seasonings
Form into 4 equal patties, make slight indentation in center
Heat skillet over medium-high heat
Cook patties 5-6 minutes per side
Lower heat, add cream and cheese

Assemble: bun, fresh spinach, patty with sauce, onion, top bun

2 cups frozen mixed vegetables (carrots, peas, corn)
