Now that you know the tequila regions (highland and lowlands), lets talk styles. Tequila comes in about five different styles, Silver/White/Blanco, Gold/Oro, Reposado, Añejo, and extra Añejo/Ultra Añejo. These styles are categorized by how long the tequila has been aged. Aging is basically how long the tequila was able to marinate in the barrels before being bottled and shipped for consumption.
Silver/White/Blanco tequilas are the youngest out of the batch. In these tequilas you'll get purest agave taste. They're typically bottled anywhere from immediately to two months after distillation.
Gold/Oro tequilas are hybrids, they're either mixed with older aged tequila or flavored with caramel coloring, oak extract, glycerin, or sugar syrup (making it a mixto).
Reposado tequilas are aged a minimum of two months—but less than a year. During this aging process, the tequila takes on a golden color and toasty flavors.
Añejo tequilas are my personal favorite. These tequilas are aged a minimum of one year—but less than three years and they must be aged for at least one year in a barrel that does not exceed 600 liters. During this aging process, the color of the tequila darkens to a richer amber color, and the flavors become richer, smoother and more complex.
Extra Añejo/Ultra Añejo refers to tequila aged a minimum of three years in oak barrels.This style almost resembles scotch in the peatyness and caramel flavor it acquires.
