White Chocolate Pineapple Pecan Cheesecake
Ingredients:
1 ½ cups graham cracker crumbs
½ cup melted butter
24 oz cream cheese, softened
1 cup granulated sugar
3 large eggs
1 tsp vanilla extract
1 cup crushed pineapple, drained
1 cup chopped pecans
½ cup white chocolate, melted
Directions:
Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
Mix the graham cracker crumbs and melted butter together, then press into the bottom of the prepared pan. Set aside.
In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy.
Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
Fold in the crushed pineapple and chopped pecans until evenly distributed.
Pour the filling over the crust and spread evenly.
Bake for 60-70 minutes, or until the center is set and the top is lightly browned.
Allow the cheesecake to cool in the oven with the door slightly open for about an hour. Then refrigerate for at least 4 hours or overnight.
Before serving, drizzle the melted white chocolate over the top and sprinkle with additional chopped pecans.

Apple Salad
Ingredients:
4 large Honeycrisp apples, cubed
1 lemon, juiced
⅓ cup mayonnaise
1 ½ tablespoons brown sugar
2 ribs celery, thinly sliced
1 cup seedless red grapes, halved
½ cup chopped pecans
½ cup dried cranberries
Directions:
Prepare the apples: Toss the cubed apples with the lemon juice to prevent browning.
Make the dressing: In a large bowl, whisk together the mayonnaise and brown sugar until smooth.
Combine ingredients: Add the apples, celery, grapes, pecans, and cranberries to the bowl. Stir until everything is evenly coated with the dressing.
Chill: Cover the salad and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

These Churro Cheesecake Bites are a delicious fusion of creamy cheesecake and cinnamon-sugar churros, making for a delightful treat! Perfect for parties or as a sweet snack!
Ingredients
For the Cheesecake Filling:
8 oz cream cheese, softened
1/4 cup sugar
1 teaspoon vanilla extract
1 egg
1 tablespoon all-purpose flour
For the Churro Coating:
1 cup sugar
2 teaspoons ground cinnamon
1/2 cup unsalted butter, melted
For the Churro Dough:
1/2 cup water
1/2 cup unsalted butter
1 cup all-purpose flour
1/4 teaspoon salt
2 large eggs
Instructions
1. Preheat the Oven
Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners.
2. Prepare the Cheesecake Filling
Mix Ingredients: In a bowl, beat together cream cheese, sugar, and vanilla until smooth. Add the egg and flour, mixing until well combined.
3. Make the Churro Dough
Combine Water and Butter: In a saucepan, bring water and butter to a boil. Remove from heat.
Add Flour and Salt: Stir in flour and salt until a dough forms. Let cool for a few minutes.
Add Eggs: Beat in eggs one at a time until fully combined.
4. Assemble the Bites
Fill Muffin Tin: Spoon or pipe a small amount of churro dough into the bottom of each mini muffin cup (about 1/3 full). Top with a dollop of cheesecake filling.
Add More Dough: Add another layer of churro dough on top of the cheesecake filling, filling each cup about 3/4 full.
5. Bake
Bake: Bake for 18-20 minutes or until golden brown. Let cool in the pan for about 10 minutes before transferring to a wire rack.
6. Coat in Cinnamon Sugar
Mix Coating: In a bowl, combine sugar and cinnamon.
Dip Bites: While still warm, brush each churro cheesecake bite with melted butter and then roll in the cinnamon-sugar mixture until coated.
