People often ask how to eat microgreens. The simplest answer? Add them to almost anything.
Microgreens are simply a more concentrated version of their full-grown vegetable. These arugula microgreens liven up this lunch with a fresh, peppery bite.

Farm chores this morning. After germinating, these trays spent three days stacked to encourage even growth and strong roots. Today is their first day in the light and their first watering since coming out of the stack.
They’ll be harvested on February 4 and delivered on February 5 in Arvada and Golden. If you’d like to be added to the waitlist, just send us a message.
With such a mild winter, we decided to try a small experiment in our home garden. We built a simple hoop house over one of our raised beds and started lettuce a few different ways. Some seeds were started indoors, some were direct sown, and a few plants were transplanted from an uncovered bed where they had already survived part of the winter.
Once everything was in place, we mulched the bed with shredded leaves from our yard to help insulate the soil and hold moisture. We’ve been watering about once a week and letting the season do the rest. Now we’ll see how it goes.

Rutabaga microgreens.
Bright and crisp with a mild, slightly sweet brassica flavor. Less sharp than radish and more delicate than mature rutabaga, they add freshness and light crunch to salads, grain bowls, sandwiches, tacos, and roasted vegetable dishes.
Like mature rutabaga, these young greens naturally contain vitamin C, along with small amounts of potassium and B vitamins common to brassica vegetables.
