This season we experimented with a “Honey Processed” coffee and the results are amazing. “Honey Processed” coffee is a processing technique in which the outer red skin of the coffee cherry is removed but instead of washing off the sticky mucilage as would be done in a washed process, we simply lay the parchment out to dry. This is what creates the yellowish/reddish color on the coffee parchment!
