Panang Curry Mole

This dreamy Thai-Mexican fusion meal is my new favorite weeknight dinner! Roasted veggies + a 10 minute Panang curry mole sauce truly cannot be beat. It’s fast, SO flavorful, and perfect for fall.

Made with Panang curry paste & their creamiest coconut milk of all time plus roasted pumpkin or squash and a handful of ingredients you probably already have in the fridge or pantry.

Curry dinners are a family fave! Let's make Green Jackfruit Curry today with lots of hidden greens for your tasty 5 a day. Here's what you need:

Ingredients
1 can Chef’s Choice Green Jackfruit
2 tablespoons olive oil
4 spring onions, finely sliced (saving the green tops for garnish)
1 garlic clove, minced
1 inch fresh ginger, grated
3-4 tablespoons Chef's Choice Green Curry Paste
400ml Chef's Choice Coconut Milk
200ml hot water or cooking water from the rice
4-5 large chilis, cut into 2-3 pieces
150g frozen peas
150g frozen edamame
6-8 tenderstem broccoli, sliced lengthways
1 tablespoon Chef's Choice Vegan Fish Sauce
1 tablespoon coconut sugar
Fresh lime, to serve
Fresh coriander, to serve

Jasmine rice, cooked to serve
