Looking for a weight-loss alternative this Sankranti πΎπ
Try this Gluten-free Pongal made using healthy foxtail millet instead of conventional rice .
Instructions :
Wash and Soak 1 cup foxtail millet and 1 cup yellow moong for an hour .
Transfer the soaked millet and lentil into a cooking pot / rice cooker / insta pot . ( I made this Pongal in a electric rice cooker )
Add 6 cups water .
Add Salt ( 2 tsps ) + 1/2 tsp turmeric powder
Give a good mix .
Set to cook mode .
Pour in the tadka to the softly cooked lentil millet .
Mix . Serve hot with chutney / Sambar .
Tadka :
Desi Ghee 2 tbsps
Finely chopped ginger 1 tbsp
Crushed cumin + black pepper 1 + 3/4 tbsp
Hing 1/2 tsp
Fresh curry leaves 2 sprigs
Cashew nuts 12 fry till golden .
