The ptyalin enzyme is absent or produced in minor amounts in newborns. The enzyme helps break down starch into sugar so that the body may absorb it more readily.
Babies get unwell when we give them starch because their bodies are unable to process the complicated starch components. Babies are particularly vulnerable to stomach illnesses because undigested starch damages their developing stomachs and ferments in the colon, fostering the growth of pathogenic bacteria and killing beneficial ones. This weakens the infant's immune system and causes recurrent illnesses.
