Let's make salted fried rice, a Filipino favorite!!!
Salted Fried Rice with a golden twist:
*Ingredients:*
- 2 cups cooked rice (preferably day-old rice)
- 1 tablespoon vegetable oil
- 1 small onion, diced
- 2 clauses garlic, minced
- 1 cup mixed vegetables (e.g., peas, carrots, corn)
- 2 eggs, beaten
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon turmeric powder (for the golden color)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- Chopped scallions for garnish
*Instructions:*
1. Heat oil in a wok or large skillet over medium-high heat.
2. Add onion and garlic; stir-fry until fragrant.
3. Add mixed vegetables; cook until tender.
4. Push vegetables to one side.
5. Pour in beaten eggs; scramble them.
6. Mix eggs with vegetables.
7. Add cooked rice, salt, pepper, turmeric, soy sauce, and oyster sauce (if using). Stir-fry until combined.
8. Taste and adjust seasoning.
9. Garnish with scallions.
10. Serve hot.
