TUMERIC AND KALE LAKSA RECIPE!
INGREDIENTS FOR TWO:
1 1/2 cups vegetable stock
1 Tbsp tamari
1 Tbsp fish sauce - for fish version only!
2cm k**b fresh ginger, peeled and grated
2 cm k**b fresh turmeric, grated
1/2 tsp honey
3-4 small carrots, chopped
4 kale leaves, shredded
Either 200gm white-fleshed fish cut into bite-sized pieces or
2 handfuls of white mushrooms, sliced 1/2 can coconut milk Generous handful rice noodles
2 tsp raw sugar
Pinch chilli flakes - to taste
Give yourself about 30 minutes to make this one from start to finish.
HOW TO:
In a large pot combine the veg stock, tamari, ginger, turmeric and honey, with fish sauce if you're using it.
Bring to the boil, add the carrots and simmer for 8-10 minutes until tender.
Add the fish or mushrooms, kale, coconut milk and noodles.
Add the sugar and chilli flakes.
Bring back to a simmer and cook for a further 8 minutes or until the rice noodles are soft.
Check seasoning and adjust if necessary.
Done.
