Simple pineapple cake recipe (fruit cake)

Ingredients ​for the cake:
​▪︎2 cups (about 250g) All-Purpose Flour
▪︎​1 cup (200g) Granulated Sugar
▪︎​1 teaspoon Baking Soda
▪︎​1/2 teaspoon Salt
▪︎​1½ cup Fresh finely diced pineapple
▪︎1/2 cup Fresh pineapple juice
▪︎​2 large Eggs (room temperature is best)
▪︎​1/2 cup Butter melted (or vegetable oil)
▪︎​1 teaspoon Vanilla Extract

Instructions
- Prepare your cake pan, apply a little butter or oil & parchment paper.
​- Next preheat your oven to 350°F (175°C). Grease and flour your pan properly
​- Into a large bowl, whisk together the flour, sugar, baking soda, and salt.
​- Add in the crushed pineapple (with its juice), melted butter (or oil), eggs, and vanilla extract to the dry ingredients.
- Stir gently until everything is just combined. Be careful not to overmix! Overmix will make the cake tough and dense.
​- Pour the batter into your prepared pan. Bake for 30-40 minutes, or until a toothpick comes out clean. Then take it out from the oven.
- Allow to cool off completely in the cake pan before taking it out. Slice it up and enjoy!
