Inspired by his talented mother, who was the personal chef to the British Ambassador of Berlin, the first female Sous Chef in Britain and senior sous chef at the Caledonia Hotel, Jamie was in good hands and frequented the kitchen from a young age.Jamie worked at The Colliston Inn, owned by his parents for six years where he met his wife Kelly, working as a barmaid. On the menu this week, monkfish liver, which we love when we have the opportunity to get it from our amazing supplier . We cure and steam it, slice into portions and caramelise with a blow torch, served on sourdough with fermented neap. Stunning! And more ethical than foie gras with a better texture and flavour.
