Cashew Nuts โ€“ ยผ cup (50g), lightly toasted

Almond Flakes โ€“ 100g, lightly toasted until golden

Chia Seeds โ€“ 2 tsp

Flaxseeds โ€“ 2 tsp

Vanilla Essence โ€“ 1 tsp

Cinnamon Powder โ€“ ยผ tsp

Dark Chocolate (70%+ cacao) โ€“ 150g (for coating)

Optional Garnishes:

Sea salt flakes (pinch, for sprinkling)

Crushed almond flakes or pistachios

Desiccated coconut or cacao nibs

๐Ÿฝ๏ธ Method

1. Prepare the Ingredients

Soak firm dates in warm water for 5 minutes, then drain.

Toast cashews and almond flakes separately in a dry skillet until lightly golden and fragrant.

2. Blend the Base

In a food processor (or bowl + hand blender), pulse cashews, almond flakes, chia, and flaxseeds into a coarse crumb.

Add dates, vanilla, and cinnamon. Blend until sticky and cohesive.

๐Ÿ‘‰ Chefโ€™s Adjustment: Almond flakes add structure โ€” so the dough will be firmer. If too dry, add 1โ€“2 tsp warm water; if too sticky, fold in more crushed almonds.

3. Shape into Balls

Roll into walnut-sized balls (~20g each) with damp hands. Place on parchment-lined tray. Chill for 15โ€“20 mins.

4. Chocolate Coating

Melt dark chocolate gently over a water bath (bain-marie). Dip each ball, allowing excess to drip off. Return to tray.

5. Finish & Set

Sprinkle with sea salt or garnish of choice. Chill until the chocolate sets (20 mins).
