Difference Between Compound Chocolate & Couverture Chocolate 🍫✨
A lot of people assume all chocolate is the same but there’s actually a huge difference between compound chocolate and couverture chocolate.
Compound chocolate is made using vegetable fats instead of cocoa butter. It’s easier to handle, doesn’t require tempering, and is commonly used in commercial chocolates, bakery items, and large-scale production because it’s more cost-effective.
Couverture chocolate, on the other hand, contains a higher percentage of real cocoa butter. This is what gives it a richer flavour, smoother texture, glossy finish, and that beautiful “snap” when broken.
The biggest difference?
Taste and mouthfeel.
