Mix together all the ingredients in a bowl, then pack into a sterile 1 litre jar, make sure you leave 2.5cm of headspace at the top of the jar. Close the lid and allow to ferment for at least 3 days at room temperature. Salsas are one of the livelier ferments and can make a lot of noise. As the CO2 escapes some of the salsa juices escapes too, so place the jar on a dish to collect the juice and open with CARE! When salsa is ready transfer to fridge. It will keep for up to 6 months.
