Pineapple – not just eaten as a fruit.

Used for cooking in many cuisines – in pizza with chicken as the Hawaiian pizza, as a dessert – the Pineapple upsidedown cake, grilled and BBQ served with Ham, mashed and add to freshly chopped tomatoes, onions, herbs as a salsa… etc.

I had some leftover beetroot & carrots rice and decided to make Pineapple fried rice and served it with Curry prawns

A complete and quick fast easy meal, skip the prawns and substitute for an aubergine curry or any vegetables you have on hand for a vegan meal.
