Do you know what cupping is? ☕️

Cupping is a method used by roasters, producers, farmers and anyone with an interest in coffee. It is the easiest way to sample, analyse and test coffee.

It’s a simple way of brewing to get the taste of the coffee through. This can be used for purchasing decisions, roasting profiles, and checking the taste of the coffee. 😋

The idea of the ‘slurp’ when using the cupping spoon is to get air in the coffee to get the full flavour, and you taste and spit the coffee out (like in wine tasting).

Meet Toby 👋

You might recognise Toby from Flour, Water, Salt, but a few months ago, Toby made the jump to be a Kickbacker and took over running The Brickworks and HQ coffee shops! Safe to say he has had his hands full!

When he's not running the show, you'll find him getting properly lost in the Peaks on his road bike 🚴, hiking up in the hills 🥾, or hunting down the best coffee shops he can find.

Toby is a pourover guy through and through, something natural, funky, maybe even a co-ferment if we're feeling wild 😎 If the sun's out however, a nice refreshing Iced flattie☀️

The people have been the standout highlight for Toby across HQ, Brickworks and FWS 💚

Hey Juba 👋🍓🍫

This month’s featured coffee comes from Mexico, with taste notes of Red Berries and Chocolate Truffle 😋

Juba doesn’t come easy, and that’s exactly what makes it special.
