The 18th century godfather of Gastronomy; Brillat-Savarin, defines it as the study of all things concerning that which nourishes us. Gastronomy is the study of food, food culture and food systems; not just how food is prepared and eaten, but how it is grown, traded, considered and communicated, its value to us, and its effect on the planet and our future. Gastronomy takes seriously the question of how to understand and affect food culture, while maintaining awareness of environmental, social, physiological and economic wellbeing and the importance in celebrating good food. The MSc Gastronomy at QMU is a year long programme that aims to address these issues and cultivate a deeper understanding of food that we might effect a more positive and sustainable food culture into the future. It is ideal for anyone wishing to enhance their knowledge of food related industry, or to build on their love of food for a future career.
